Cardamom granola

This is autumn in a breakfast cereal!


Ingredients

300g Oats

75g cup Pumpkin seeds

75g Almond

75g Pecans

50g Hazelnuts

150g Dried apricots

100g Raisins

50ml Honey

75g Brown sugar

125ml oil

1 tsp Salt

Cardamom (2 pods)

½ tsp Cinnamon


Recipe

1. Preheat oven to 180C.

2. Chop nuts or blend into rough chunks

3. Cut seeds out of the cardamom pods. Crush into fine powder in pestle and mortar.

4. Heat sugar and honey in a pan with enough water to cover the sugar (few drops). Heat lightly until syrupy consistency.

5. In a large mixing bowl combine oats, nuts, apricots (chopped) salt, spices and stir. Then add oil and sugary mixture – ensure all oats are covered (don’t add raisins here, wait till the end!).

6. Line a baking sheet with grease proof paper and spread evenly, press down with spoon.

7. Bake for 20-30 mins, stirring halfway. Add raisins and leave to cool completely!


Enjoy with yogurt or milk or fruit or on it's own!
